Grilled Lemon Herb Chicken with Avocado Salad
Ingredients
For the Chicken
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Juice of 1 lemon
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
Salt and black pepper to taste
For the Salad
1 avocado, diced
2 cups lettuce, chopped
1 cucumber, sliced
2 tomatoes, chopped
¼ red onion, thinly sliced
1 tablespoon olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
In a bowl, combine olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper.
Coat the chicken with the marinade and let it rest for at least 20 minutes.
3. Grill or pan-fry the chicken for 6–7 minutes on each side until fully cooked.
4. In a large bowl, combine lettuce, cucumber, tomatoes, avocado, and onion.
5. Drizzle with olive oil and lemon juice, then season with salt and pepper.
